Grilled Banana Bread with honey-roasted fruit and cinnamon cream
Banana bread is a cabinet staple – this is a quick and easy way to upsell it!
Beat bananas, sugar and vanilla until smooth.
Add the melted butter, cream, lime juice and eggs gradually until combined.
Whisk through the sieved dry ingredients.
Pour into lined greased tin.
Bake at 170°C for approximately 45 minutes.
Cut selected fruit and place in an oven-proof pan with some butter and honey. Once sizzling remove from the stove and place into the oven to roast and soften slightly.
Slice baked banana bread, brush with melted butter and grill to char.
Whip up Anchor Cream with a little vanilla, pinch of cinnamon and runny honey.
Place the grilled banana bread onto a plate, top with roasted fruit, add whipped cream and drizzle with runny honey.

- 410g plain flour
- 18g baking soda
