Get Ready

  • Grill burger buns
  • Smoked chipotle mayo – La Morena smoked chipotle
    in adobo sauce combined with good quality
    mayo, and a squeeze of lime.
  • Slow cooked pork hock, shredded and combined with
    harrissa and chopped tomatoes. Cooked down to reduce.
  • Green apple & coriander slaw made by combining shredded
    white cabbage with julienned apple and a good handful of
    coriander, dressed with lemon juice, olive oil and salt and pepper.
  • Slices of Mainland Brie or Mainland Camembert Log
  • Microgreens

To Build

  1. Liberally spread the grilled burger bun with smoked
    chipotle mayo.
  2. Pile on pork hock.
  3. Top with green apple & coriander slaw.
  4. Layer over sliced brie.
  5. Scatter with a few microgreens.
