Ingredients

  • 1 large agria (skin on), cooked Lyonnaise style
  • 3 rashers Hellers Honey Cured Streaky Bacon, grilled till crispy
  • 4 eggs, whisked and scrambled
  • 1/4 brown onion, sliced thinly & caramelised
  • 2 tablespoons Bacon Jam (see recipe)
  • 2 slices Mainland Swiss Natural Sliced Cheese 
  • Rocket to garnish
  • 2 brioche burger buns

Bacon Jam

  • 1kg Hellers Honey Cured bacon, diced
  • 2 large sweet onions, thickly sliced
  • 1/2 cup brown sugar
  • 1/3 cup strong brewed Allpress coffee
  • 1 tablespoon balsamic vinegar

 

Method:

Sweat bacon and onions for 5 minutes before adding the rest of the ingredients.

Cook for 45 minutes on a medium heat until sticky and reduced.
