To Assesmble This Dish You Will Need:
- 120g cured smoked salmon
- Pickled cucumber, fennel, radish & shallots
- 1 slice sourdoughy, chargrilled
- 2 poached eggs
- Whipped Feta (see recipe)
- Yuzu Hollandaise (see recipe)
Whipped Mainland Feta
- 500g Mainland Feta
- 200g De Winkel Natural Yoghurt
- 50g chopped chives
Method
Whip feta, yoghurt & chives in a mixer until smooth

Yuzu Hollandaise
- 6 egg yolks
- 60ml Barker's Professional Yuzu Citus Dressing
- 1 lemon, zest and juice
- 1 tsp wholegrain mustard
- 500g Mainland Butter (clarified and warm)
Method
- In a food processor, add all ingreidents except the butter
- Slowly pour in warm butter until all butter is gone and sauce has thickened. Season to taste
