To Assesmble This Dish You Will Need:

  • 120g cured smoked salmon
  • Pickled cucumber, fennel, radish & shallots
  • 1 slice sourdoughy, chargrilled
  • 2 poached eggs
  • Whipped Feta (see recipe)
  • Yuzu Hollandaise (see recipe) 

Whipped Mainland Feta 

  • 500g Mainland Feta
  • 200g De Winkel Natural Yoghurt
  • 50g chopped chives

 

Method

Whip feta, yoghurt & chives in a mixer until smooth

Yuzu Hollandaise 

  • 6 egg yolks
  • 60ml Barker's Professional Yuzu Citus Dressing
  • 1 lemon, zest and juice
  • 1 tsp wholegrain mustard
  • 500g Mainland Butter (clarified and warm) 

 

Method

  1. In a food processor, add all ingreidents except the butter
  2. Slowly pour in warm butter until all butter is gone and sauce has thickened. Season to taste
