Ingredients
- 1L Anchor Blue Top Milk
- 1 pinch ground nutmeg
- 1 pinch ground clove
- 100g Mainland Butter
- 100g plain flour
- 160g Valumetric cheese
- 375g grated Mainland Camembert
- Panko or gluten free breadcrumbs
Method
- Make a roux by melting the butter and adding plain flavour and stir until smooth
- Add milk and whisk until smooth and thickened
- Add spcies and cheeses and whisk until smooth
- Chill uncovered until set, roll/cut to shape and double crumb in panko breadcrumbs
- Deep fry croquettes at 160°C until crispy and golden brown
Portion yield - 10 croquettes
To assemble this dish you will need:
- Mixed wild mushrooms
- Potato hash cake
- Mainland Camembert Croquette (see recipe)
- Pumpkin pesto
- 1 egg, crispy fried
- Soft herb salad
- Barker's Professional Mustard & Herb Dressing
- Pickled red onions
