The Hot House Nashville Style Chicken! Crispy, juicy and spicy all at once, Hot Chicken is not for the faint of heart, but it sure is delicious. Prince's Hot Chicken Shack launched the hot chicken craze in Nashville and here we are borrowing the idea of a Tennessee icon to create a fusion of two of the world's iconic takeout foods.

- 1 large pizza dough
- 1 ladle pizza sauce
- 138g Anchor Extra Stretch mozzarella
- 180g fried chicken nibbles or strips - your own recipe
- 25ml ranch dressing
- 25ml hot sauce or buffalo chicken sauce (recommend Franks, or sriracha)
- 10g chives, chopped
- 20g green capsicum, diced
Make a margarita base with sauce and cheese, add the fried chicken and green capsicum evenly to the base and cook.
Once cooked evenly drizzle the ranch dressing over the pizza and then the hot sauce. Sprinkle with chopped chives and serve.
Creole Fried Chicken Marinade
- 250ml canola oil
- 1 tbsp smoked paprika
- 1 tbsp onion powder
- 1 tbsp cumin powder
- 1/2 tbsp turmeric
- 1/2 tbsp cayenne pepper
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1kg chicken thighs, breasts or nibbles
Mix all the spices and oil together and cook over a stove until all the spices are cooked out. Once chilled marinade the chicken for at least 12 hours before using.
Take the chicken and dip it into chilled buttermilk before dredging into your seasoned flour.
Cook in the fryer and season with a little of your spice mix to finish. A squeeze of lemon to finish and take your chicken to the next level.

Add sliced pickles or green olives for some sharpness. Finish with crumbled blue cheese for an amazing match with the spices. Vegetarian alternatives, use hushpuppies or corn fritters. Grab 1kg plain flour and add your spice mix minus the ginger and garlic to create a seasoned flour to give your fried chicken that extra kick it deserves. This can be kept for multiple uses throughout the week. Don’t like hot sauce? Use a box of tissues and harden up!
