Classic with a modern twist – a toasty finished with luscious cheese sauce. Smoked fish brioche Croque madame, swiss cheese & crispy fried egg.

Croque Madame

Ingredients

  • 2 slices brioche (from loaf) 
  • 1ea Mainland Natural Swiss Cheese Slices
  • 80g smoked fish pâté (see recipe)
  • 1 tbsp Mainland Unsalted Butter, softened for buttering
  • 2 tbsp AFP IQF Mozzarella Cheese bechamel (see recipe)
  • 1ea free-range egg, crispy fried

Method

Butter the outsides of the brioche.

Top one of the un-buttered slices of bread with swiss cheese and smoked fish pâté.

Pan-fry each side of the bread and top one side with bechamel and grated mozzarella.

Top with a crispy fried egg sunny side up.

Smoked Fish Pâté

  • 200g smoked Kingfish or Kahawai, hand-shredded 
  • 1 tbsp Anchor Cream Cheese 
  • 1/2 tsp horseradish, grated
  • 1 tbsp chives, chopped 
  • 1 tsp lemon zest
  • 6ea capers, chopped 
  • Season to taste

Method

Mix all ingredients together and bind with softened cream cheese.

Season to taste.

Mozzarella Bechamel

  • 1L Anchor Blue Top Milk 
  • 200g AFP IQF Mozzarella
  • 100g Mainland Unsalted Butter 
  • 100g plain flour 
  • 1 onion, finely diced
  • Season to taste

Method

Sweat onion with butter in a heavy based saucepan.

Add flour and stir until combined.

Add milk and bring up to heat while constantly stirring until the sauce has thickened and roux is cooked out.

Add cheese and season to taste.
