Cajun Cream Tortellini

serves 4-6

1 small shallot, finely diced 

¼ cup White Wine 

2 Tbsp Cajun Spice 

½ Qt Anchor™ Chef's Heavy Cream

1 oz Anchor™ Unsalted Butter

1 package of tortellini, cooked

What you need:

1.

Heat the pan, add finely diced shallots, add white wine.

2.

Reduce sauce until almost dry.

3.

 Add Cajun Spice and Anchor™ Chef's Heavy Cream right away and bring to a simmer.

4.

Finish with Anchor™ Unsalted Butter.

5.

Plate tortellini and add the sauce.

6.

Garnish with scallion and serve.
