SERVES 4-6
 

WHAT YOU NEED

• 1 small Shallot, finely diced 

• ¼ cup White Wine 

• 2 Tbsp Cajun Spice 

• ½ Qt Anchor™ Chef's Heavy Cream

• 1 oz Anchor™ Unsalted Butter

• 1 package of tortellini, cooked 


HOW IT’S DONE

1. Heat pan.

2. Add finely diced shallot.

3. Add White Wine.

4. Reduce sauce until almost dry.

5. Add Cajun Spice and Anchor™ Chef's Heavy Cream right away.

6. Bring to a simmer.

7. Finish with Anchor™ Unsalted Butter

8. Plate Tortellini.

9. Add sauce.

10. Garnish with scallion.

11. Serve.
