WHAT YOU NEED

Tomato Bisque 

• 1 Tbsp Oil 

• 1 cup White Onion, diced 

• ½ cup Celery, diced 

• ½ cup Carrot, diced 

• 1 tsp Garlic, minced 

• 1 bouquet garni 

• 3 lbs Tomatoes, roasted, peeled 

• ½ Qt Anchor™ Chef’s Cooking Cream

• 1 Qt Stock 

Bouquet Garni 

• 6 sprigs (Oregano, Rosemary, Thyme) 

• 3 leaves fresh sage 

• 3 bay leaves 

• 1 celery stalk 


HOW IT’S DONE

Tomato Bisque

1. Heat pan.

2. Add oil.

3. Sweat vegetables.

4. Add garlic, bouquet garni, and stock.

5. Simmer. 

6. Add tomatoes and reduce by half.

7. Remove herbs. 

8. Puree.

9. Add Anchor™ Chef's Cooking Cream.

10. Add salt and pepper to taste.

11. Garnish with Toasted Herb Crostini.

12. Serve. 

Bouquet Garni 

1. Slice celery lengthwise.

2. Stuff herbs into the inside of celery slice.

3. Cover with the other half of the celery.

4. Tie together with butchers twine.

5. Use.
