Ingredients
Tomato Bisque:
    • 1TbspOil
      1cupWhite Onion, diced
      1/2cupCelery, diced 
      1/2cupCarrot, diced 
      1tspGarlic, minced 
      1bouquetGarni 
      3lbsTomatoes, roasted, peeled 
      1/2QtAnchor™ Chef’s Cooking Cream
      1QtStock 
    Bouquet Garni:
      • 6sprigs(Oregano, Rosemary, Thyme) 
        3leavesFresh sage 
        3leavesBay
        1 Celery stalk 
      Method
      1. Heat the pan and add the oil.
      2. Sweat vegetables, add garlic, bouquet garni, and stock, then simmer.
      3. Add tomatoes and reduce by half.
      4. Remove herbs. 
      5. Puree.
      6. Add Anchor™ Chef’s Cooking Cream.
      7. Add salt and pepper to taste, garnish with Toasted Herb Crostini and serve.
      Bouquet Garni Method:
      1. Slice celery lengthwise.
      2. Stuff herbs into the inside of celery slice.
      3. Cover with the other half of the celery.
      4. Tie together with butchers twine.
      5. Use.
