Ingredients
To Assesmble This Dish You Will Need:
      120grCured smoked salmon
        Pickled cucumber, fennel, radish & shallots
      1sliceSourdough, chargrilled
      2 Poached eggs
        Whipped Feta (see recipe)
        Yuzu Hollandaise (see recipe) 
      Whipped Mainland Feta:
          500grMainland Feta
          200grDe Winkel Natural Yoghurt
          50grChopped chives
          Yuzu Hollandaise:
              6 Egg yolks
              60mlBarker's Professional Yuzu Citus Dressing
              1 Lemon, zest and juice
              1tspWholegrain mustard
              500grMainland Butter (clarified and warm) 
              Method
              Whipped Mainland Feta:
              1. Whip feta, yoghurt & chives in a mixer until smooth

              Portion yield - 7

              Yuzu Hollandaise:
              1. In a food processor, add all ingreidents except the butter
              2. Slowly pour in warm butter until all butter is gone and sauce has thickened. Season to taste
