House-Smoked Salmon on Rye

To Assesmble This Dish You Will Need:
120 gr Cured smoked salmon
    Pickled cucumber, fennel, radish & shallots
1 slice Sourdough, chargrilled
2   Poached eggs
    Whipped Feta (see recipe)
    Yuzu Hollandaise (see recipe) 
Whipped Mainland Feta:
500 gr Mainland Feta
200 gr De Winkel Natural Yoghurt
50 gr Chopped chives
Yuzu Hollandaise:
6   Egg yolks
60 ml Barker's Professional Yuzu Citus Dressing
1   Lemon, zest and juice
1 tsp Wholegrain mustard
500 gr Mainland Butter (clarified and warm) 
Whipped Mainland Feta:
  1. Whip feta, yoghurt & chives in a mixer until smooth

Portion yield - 7

Yuzu Hollandaise:
  1. In a food processor, add all ingreidents except the butter
  2. Slowly pour in warm butter until all butter is gone and sauce has thickened. Season to taste
