Ingredients
Roasted Cauliflower
1noWhole Cauliflower 
50grOlive Oil  
  Salt and Pepper (Season)
Cheese Sauce Base
60grWestern Star Unsalted Butter
60grPlain Flour 
1000grAnchor UHT Milk
100grPerfect Italiano Traditional Mozzarella
50grPerfect Italiano Grated Parmesan
75grAnchor Colby Cheddar 
  Salt (Season)
  Pepper (Season)
Method
Roasted Cauliflower:
  1. Rub all cauliflower florets liberally with olive oil and season with salt and pepper 
  2. Roast in oven at 200°C till golden brown and tender, if getting to dark cover with foil 
Cheese Sauce Base:
  1. In a pot, heat Anchor UHT milk until scalding 
  2. In another pot, melt Western Star Unsalted Butter till foaming, add flour and cook out for 2-3 minutes 
  3. Slowly add scalded milk and stir constantly to achieve a smooth sauce  
  4. Add Perfect Italiano Grated Parmesan and Anchor Colby Cheddar  
  5. Season with salt and pepper 
Assembly:
  1. Pour Cheese Sauce Base onto serving platter, top with Perfect Italiano Traditional Mozzarella and gratinate  
  2. Top with roasted cauliflower 
  3. Garnish with pine nuts, pomegranate, and curry oil
