Salami and Fennel Pizza

Ingredients
 
1 Pizza dough base, 30cm 
60gTomato sugo sauce 
100gPerfect Italiano™ Mozzarella Shredded
60gFennel, shaved 
40gSalami, thinly sliced 
20gFennel, shaved
10mLOlive oil 
½ Lemon, juiced 
10 Fennel fronds, picked
  Flaked sea salt and cracked pepper, to taste 
 
Method

Yield: 1 serving, Prep time: 5 mins, Cook Time: 6 mins

  1. Place base on a 30cm pizza tray, spread tomato sugo over base.
  2. Sprinkle Perfect Italiano Mozzarella Shredded over tomato sugo.
  3. Evenly scatter 60g fennel and then salami over base.
  4. Cook in preheated oven at 270°C for 6 minutes until crisp. Cooking time and temperature will vary depending on oven i.e woodfired, conveyor, convection.
  5. Remove from oven. Mix 20g of shaved fennel with olive oil, lemon juice, fennel fronds in a small bowl.
  6. Garnish cooked pizza with prepared fennel salad. Season with sea salt and pepper.

Chef's Tip
Salami can be substituted with roasted capsicum as a vegetarian option.
