Rice in Cheesy Sauce

Ingredients
Cheese Sauce Bottom
60 gr Anchor Unsalted butter 
60 gr Plain Flour
1000 gr Anchor UHT Milk  
50 gr Anchor Parmesan  
75 gr Anchor Colby Cheddar 
  gr Salt (Season)
  gr Pepper (Season)
400 gr Anchor Extra Stretch+ Mozzarella 
Classic Fried Rice
600 gr Cooked Rice (Cooled) 
50 gr Onions (Finely chopped) 
50 gr Shallots (Finely sliced) 
4 nos Eggs 
20 gr Coriander (Chopped) 
10 gr Spring Onion (Chopped) 
     Soy Sauce (Season)
    Oil for stir frying
Method
Cheese Sauce Bottom:
  1. In a pot, heat Anchor UHT milk till scalding point
  2. In another pot, melt Anchor Unsalted Butter till foaming, add flour and cook out for 2-3 minutes 
  3. Slowly add scalded milk and stir constantly to achieve a smooth sauce  
  4. Add Anchor Parmesan and Anchor Colby Cheddar  
  5. Season with salt and pepper 
  6. Pour onto serving platter, distribute 100g Anchor Extra Stretch+ Mozzarella evenly on a heatproof plate 
  7. Bake at 230°C in convection oven until cheese melts and brown slightly 
Classic Fried Rice:
  1. In a frying pan on medium heat, add enough oil to cover shallots 
  2. Add shallots when oil is warmed, slowly fry shallots until golden brown and crispy 
  3. Strain shallot oil and separate fried shallots from oil 
  4. In the same frying pan, add some shallot oil and fry eggs until fragrant 
  5. Push eggs aside, add onions and fry until fragrant 
  6. Add cooked rice onto onions and fry together with eggs, Drizzle more shallot oil as needed 
  7. Season fried rice with soy sauce, remove from heat 
  8. Add coriander, spring onions and fried shallots, toss and ensure even distribution 
  9. Serve hot on a bed of Anchor Extra Stretch+ Mozzarella sauce bottom
