Ingredients
    1largeAgria (skin on), cooked Lyonnaise style
    3rashersHellers Honey Cured Streaky Bacon, grilled till crispy
    4 Eggs, whisked and scrambled
    1/4 Brown onion, sliced thinly & caramelised
    2tbspBacon Jam (see recipe)
    2slicesMainland Swiss Natural Sliced Cheese 
      Rocket to garnish
    2 Brioche burger buns
    Bacon Jam:
    1kgHellers Honey Cured bacon, diced
    2largeSweet onions, thickly sliced
    1/2cupBrown sugar
    1/3cupStrong brewed Allpress coffee
    1TbspBalsamic vinegar
    Method
      1. Sweat bacon and onions for 5 minutes before adding the rest of the ingredients.
      2. Cook for 45 minutes on a medium heat until sticky and reduced.
