Smoked Fish Croque Madame

Croque Madame: 
    2 slices Brioche (from loaf) 
    1 ea Mainland Natural Swiss Cheese Slices
    80 gr Smoked fish pâté (see recipe)
    1 tbsp Mainland Unsalted Butter, softened for buttering
    2 tbsp AFP IQF Mozzarella Cheese bechamel (see recipe)
    1 ea Free-range egg, crispy fried
Smoked Fish Pâté:
    200 gr Smoked Kingfish or Kahawai, hand-shredded 
    1 tbsp Anchor Cream Cheese 
    1/2 tsp Horseradish, grated
    1 tbsp Chives, chopped 
    1 tsp Lemon zest
    6 ea Capers, chopped 
        Season to taste 
Mozzarella Bechamel:
    1 L Anchor Blue Top Milk 
    200 gr AFP IQF Mozzarella
    100 gr Mainland Unsalted Butter 
    100 gr Plain flour 
    1   Onion, finely diced
        Season to taste
Croque Madame:
  1. Butter the outsides of the brioche.
  2. Top one of the un-buttered slices of bread with swiss cheese and smoked fish pâté.
  3. Pan-fry each side of the bread and top one side with bechamel and grated mozzarella.
  4. Top with a crispy fried egg sunny side up.
Smoked Fish Pâté:
  1. Mix all ingredients together and bind with softened cream cheese.
  2. Season to taste.
Mozzarella Bechamel:
  1. Sweat onion with butter in a heavy based saucepan.
  2. Add flour and stir until combined.
  3. Add milk and bring up to heat while constantly stirring until the sauce has thickened and roux is cooked out.
  4. Add cheese and season to taste.
