Spiced Cucumber, Lime, and Coriander Mocktail

Spiced Sugar Syrup:

  • 50g sugar
  • 1 star anise
  • 1 whole green cardamon
  • 5 pink peppercorns
  • 1/2 vanilla pod
  • 50ml water

Cucumber and Coriander Drink:

  • 2pcs fresh cucumber
  • 25gr coriander
  • pinch of salt
  • pinch of pepper
  • juice of 1 lime
  • 15gr spiced sugar syrup
  • 150gr crushed ice

Coconut Foam:

  • 450ml Anchor Chef's Classic Whipping Cream
  • 25gr coconut puree
  • zest of 1 lime
  • 5gr sugar syrup

Spiced Sugar Syrup:

  • Add the sugar to a saucepan to make a light caramel. Add the spices and water and let it simmer till all sugar is dissolved. 
  • Pass through a sieve and refrigerate. 

Cucumber and Coriander Drink:

  • Cut medium size pieces of the fresh cucumbers and put them in a blender. Add coriander, salt, pepper, lime juice, spiced sugar syrup and crushed ice. 
  • Blend the mixture for 2 minutes. Refrigerate until use. 

Coconut Foam:

  • Mix Anchor Chef's Classic Whipping Cream, coconut puree, lime zest and sugar syrup and put in the iSi Gourmet Whip. 
  • Insert the gas cannister and shake 14-18 times till a nice piping consistency.


  • First pour in the cold cucumber and coriander drink.
  • Pipe a good amount of coconut foam on top. 


  • Decorate with fresh herbs, crushed spices and edible flowers.
