The iSi Gourmet Whip is made of stainless steel and easy to take apart for cleaning. The iSi Professional chargers contain N2O (nitrogen dioxide) which dissolves in the fat of the cream. Under pressure the gas used in the whipper will expand, causing the liquid cream to expand into a foam - creating whipped cream within.
