Grilled Banana Bread with Roasted seasonal fruit and honey cream

    450 gr Banana
    8 gr Vanilla Essence
    450 gr Caster Sugar
    110 gr Anchor Unsalted Butter (Melted)
    265 gr De Winkel Plain Yoghurt
    190 gr Egg
    2 gr Salt
    410 gr Plain Flour
    18 gr Baking Soda
        Runny Honey as desired
To Garnish:
    Seasonal fruit of your choice
    Vanilla Paste
    Anchor whipping cream - Whipped
  1. Beat bananas, sugar and vanilla until smooth with  the whisk attachment.
  2. Add the melted butter, yoghurt and eggs gradually until combined.
  3. Whisk through the sieved dry ingredients.
  4. Pour into lined greased tin and Bake at 170°C for approximately 45 minutes.
  1. Cut the selected  fruit into quarters and place  into a oven proof pan with some butter and honey – once sizzling remove from the stove and place into the oven to roast and soften slightly.
  2. Slice baked banana bread and brush some melted butter  on the surface and place onto a grill pan to char.
  3. Stir in a pinch of cinnamon and a small quantity of  vanilla paste into the Whipped cream.
  4. Place the grilled banana bread onto a plate, top with roasted fruits.
  5. Garnish with whipped cream and decorate as desired.
