Cranberry and Black Currant Mocktail

Lemongrass Sugar Syrup:

  • 50g sugar
  • 1 lemongrass
  • 3 peppercorns 
  • 1/2 vanilla pod
  • 50ml water

Cranberry and Black Currant Drink:

  • 100gr fresh cranberries
  • 100gr fresh black currants
  • juice of 1 lime
  • 15gr lemongrass sugar syrup
  • 150gr crushed ice

Citrus and Lemongrass Foam:

  • 450ml Anchor Chef's Classic Whipping Cream
  • zest of 1 lime
  • 20gr lemongrass sugar syrup

Lemongrass Sugar Syrup:

  • In a saucepan make a light caramel with sugar. 
  • Add the spices, crushed lemongrass, and water. Let it simmer till all sugar is dissolved. 
  • Pass through a sieve and refrigerate.

Cranberry and Black Currant Drink:

  • Put the fresh cranberries and black currants in a blender. Add lemon juice, lemongrass sugar syrup and crushed ice. 
  • Blend the mixture for 2 minutes. Refrigerate until use.

Citrus and Lemongrass Foam:

  • Mix Anchor Chef's Classic Whipping Cream, lime zest and lemongrass sugar syrup and put in the iSi Gourmet Whip. 
  • Insert the gas cannister and shake 14-18 times till a nice piping consistency.


  • First pour in the cranberry and black currant drink.
  • Pipe a good amount of citrus and lemongrass foam on top. 


  • Decorate with fresh berries, herbs and edible flowers.
