Ingredients
Roasted Cauliflower
1noWhole Cauliflower 
50grOlive Oil  
  Salt and Pepper (Season)
Cheese Sauce Base
60grAnchor Unsalted butter 
60grPlain Flour 
1000grAnchor UHT Milk
100grAnchor Extra Stretch+ Mozzarella
50grAnchor Parmesan  
75grAnchor Colby Cheddar 
  Salt (Season)
  Pepper (Season)
Method
Roasted Cauliflower:
  1. Rub all cauliflower florets liberally with olive oil and season with salt and pepper 
  2. Roast in oven at 200°C till golden brown and tender, if getting to dark cover with foil 
Cheese Sauce Base:
  1. In a pot, heat Anchor UHT milk until scalding 
  2. In another pot, melt Anchor Unsalted Butter till foaming, add flour and cook out for 2-3 minutes 
  3. Slowly add scalded milk and stir constantly to achieve a smooth sauce  
  4. Add Anchor Parmesan and Anchor Colby Cheddar  
  5. Season with salt and pepper 
Assembly:
  1. Pour Cheese Sauce Base onto serving platter, top with Anchor Extra Stretch+ Mozzarella and gratinate  
  2. Top with roasted cauliflower 
  3. Garnish with pine nuts, pomegranate, and curry oil
