Mainland Camembert Croquettes

yields 10 croquettes
  • 1L Anchor UHT Full Cream Milk
  • 1 pinch ground nutmeg 
  • 1 pinch ground clove
  • 100g Anchor Butter 
  • 100g plain flour
  • 160g Valumetric cheese
  • 375g Mainland Grated Cheese
  • Panko or gluten-free breadcrumbs

To assemble this dish you will need:

  • Mixed wild mushrooms
  • Potato hash cake
  • Mainland Camembert Croquette (see recipe)
  • Pumpkin pesto
  • 1 egg, crispy fried
  • Soft herb salad
  • Barker's Professional Mustard & Herb Dressing 
  • Pickled red onions

You will need:


Make a roux by melting the butter and adding plain flavour and stir until smooth


Add milk and whisk until smooth and thickened


Add spices and cheeses and whisk until smooth


Chill uncovered until set, roll/cut to shape and double crumb in panko breadcrumbs


Deep-fry croquettes at 160°C until crispy and golden brown
