Pineapple & Lime Cake
Cream Cheese Icing
- 140g Anchor Unsalted Butter, melted
- 270g coconut sugar
- 150g egg
- 250g crushed pineapple
- 5g vanilla essence
- 3g lime zest, fine
- 150g plain flour
- 80g wholemeal flour
- 20g desiccated coconut
- 5g salt
- 5g baking powder
- 5g cinnamon
You will need:

Mix the egg, pineapple, vanilla, melted butter, sugar and zest together until combined.

Blend the dry ingredients together and the add to the wet ingredients and blend together.
3.
Pour into prepared cake tins and bake at 170°C.
Cream Cheese Icing
- 150g Anchor Cream Cheese
- 470g icing sugar
- 1g lime zest, fine
- 25g lime juice
You will need:
1.
Soften the cream cheese and then add the icing sugar, zest and juice and blend until smooth.
